Help fitness – nutrition and routine?

I recently started going to the gym again. I really need help with my routine and dietary needs. I'm 25 years an average size male. MY MSN – To build muscle (but not huge) and tone down my body fat to show muscle. I bought drink whey protein and egg protein drinks and milk. When the best time to have these? When and what are the best things to eat? Should be starting in the low weights – high reps? What is a ideal weekly schedule? Many questions, but I know that thanks to all who help! I weigh 80 kg and 5 feet 10 "tall.
