Why we should avoid certain foods? like potatoes? and What about sugar in food ..?

I was looking at information nutrition of vegetables we eat and write what I can eat and what to avoid, according to the fat, sodium and sugar. I met with potatoes and many people state saying the fries are good for you, due to carbohydrates or fats or donno .. but then I realized that a raw potato 147g has 100 calories, no fat, 0-3g sugar and 24 grams of carbohydrates .. and then I thought maybe it's just bad for us when cooked some unhealthy way, such as frying or adding butter, mayonnaise and other fatty things, so I'm right? im not gona eat like a whole potato anyway, and im gona cook healthily without fat milk or May frying – perhaps as the steam? Also, everything I write and calculate the amount of CAL fat to sugar we ate at the end of the day. Sugar we eat is whole wheat bread, lowfat cheese, lactose-free skim milk, vegetables and so on simulated Bologna, and finish with 6-10g of sugar in the final day is that bad?

Potatoes have a bad reputation because of their carbohydrates, carbohydrates are sugars that cause an increase in insulin and calories are stored as fat, basically when the madness of dietary protein was removed whole white food all received failing grades. I think if I should or should not avoid to you and how your body reacts. For me it will not or very low fat is the key to losing weight. So when I'm trying, I eat a baked potato because they contain no fat. I think cutting the fat from my diet really works. I've tried low carb drives me crazy because when I'm eating normally I'm a fan of carbohydrates, I love pasta, fruit and potatoes in addition to eliminating carbohydrates does not really lose much weight, but when I cut the fat is falling! No refined sugar foods are a different story, that everyone should strive to reduce the sugar in our diet.
