Where can I find a recipe for Chocolate Fudge Cupcakes with icing for people with SOY ALLERGIES?!?

I am making cupcakes for my nutrition class. Our project is over ‘Soy Allergies’, and I wanted to make something yummy that is soy free. I thought I had found a good recipe, but one of the ingredients is Vegetable Oil, which I KNOW has soy in it. So… I need to find another one but don’t know where to look! Help Please!!! :)

I have a recipe book full of cupcake recipes for every diet and occasion!

Chocolate fudge cupcakes;
115g (4 oz) softened unsalted butter
115g (4 oz) caster sugar
115g (4 oz) self-raising flour
4 eggs
2tbs Cocoa (optional)
300g (10.5 oz) Choc chips

In a bowl set over a saucepan of water on low heat, melt the chocolate and butter together, stirring well.

Icing (optional)
115g (4oz) unsalted butter
225g (8oz) icing sugar, sieved
1tsp vanilla essence
Cocoa or food colouring for whatever icing you want!
beat all ingredients until smooth, and spread over cooled cupcakes.

Beat the eggs and sugar with an electric mixer until smooth. mix in the flour. Stir in the chocolate mixture and mix well. Spoon into 12 cupcake paper pans and bake for 20 minutes @ 160C(325F). they will be gooey and soft when done. Take them out and dust with the cocoa powder, or wait for them to cool and add icing. Store in the fridge in an airtight container for up to 3 days.

Here’s a good soy free one;
Raspberry & Cottage Cheese muffins;
300g (10.5oz) plain flour
175g (6oz) caster sugar
1tbs baking powder
pinch of salt
2 lightly beaten eggs
4tbs sunflower oil
250ml (1 cup) milk
115g (4 oz) low-fat cottage cheese
150g (5oz) raspberries

beat the eggs, milk, oil and cheese in a large bowl with an electric mixer until smooth. Add the mixed flour, salt, baking powder and sugar and stir until nearly combined. fold in the raspberries, but don’t overmix. Spoon into 12 muffin pans and bake for 20 mins. Cool for 5 mins. Store in an airtight container for up to 2 days. You can use blueberries, cranberries or chopped apricot instead of raspberries, if you want.
