Nutrition Food Lists

How is it that demand nutrition labels less nutrition than is probably in the food?
I've always wondered how a label nutritious foods to list a limited amount of vitamins and minerals, and sometimes none, when in fact contains much more. For example, I love onion soup French. at the rear of the soup again (it's a real good onion soup), which reads 0% of all. but I know on some level, the onion should be nutritious, even when dry, like a soup. Thank you.
Probably because there is not enough onions in a portion that contains enough nutrients to speak.
