Nutrition Opportunities Abroad

I am very interested in studying or volunteering abroad next Summer. I am a nutrition major so there are not many study abroad opportunities for me by my school. I am thinking I will need to volunteer abroad and I think this would be outstanding. I have no idea where to start though. I want to plan far in advance and make sure I take time to set money aside.
Does anyone have any idea of how I can get reliable information? I don’t want to get scammed and I want to make sure I have all my ducks in a row. I don’t want to get involved with anything to risky. Anyone know of any reliable sources?
I like Leave Your Mark but I want variety. I am not entirely interested in India. I like the idea of New Zealand, the Caribbean, or maybe other places. I would love to apply nutrition to my experience but I will understand if that is not possible. I do enjoy wild life conservation or something out doorsy.
its great that you want to plan in advance and get everything ready early. for help with volunteering go and look for a credible organization which provides volunteer opportunities and they will help you with the planning from the beginning to the end. they help you to give details about the volunteer work and country and pricing on everything. one good example is http://vollunteercapitalcentre.org
