I need help with replacing Butter with a healthier option?

Next wednesday is me and my partners wellness wednesday in Lifetime nutrition and Wellness. We have to make a health dish for the class and we chose Apricot and Walnut Phyllo cups. It says in the recipe to brush the Phyllo dough with melted butter and I was wondering if there is a healthier replacement for the butter.

There are, of course, several different margarines available and many of them claim to be healther. But you’ve got to consider the added ingredients. Personally, when I can’t pronounce half the ingredients in something, I’m not likely to use it. Butter is a natural, healthy product. Not something you’d want to overdo, but, considering the the wonderful taste of butter and the small amount you’ll be using, I’d go with the real butter.
