Looking for easy diabetic-friendly snacks to bring in for a group presentation to the community?
Some classmates and I are going to be presenting to a group of people regarding Diabetes nutrition. Our audience is going to primarily be Latino, and we’re planning on bringing in some examples of healthy snacks to serve. Can you give me some ideas?
We’re already going to bring in baked tortilla chips with salsa.
Most all vegetables on a typical vegetable platter are very good for diabetics…and nondiabetics, too. Basically, any non-starchy vegetable that can be eaten raw is a great snack. I rather like bell peppers, just cut into strips, as they are tasty and crunchy. My endocrinologist is a big fan of popcorn, in reasonable amounts, though he does insist that the carbs in it be counted. Popcorn gives a large volume of snack for the carb count, and it’s a fun food. Nuts make good snacks in moderation. They do have oil in them, so they have to be eaten in small amounts, but sometimes just having a handful of nuts is satisfying.
One of the things that I’ve learned is to make sure that I measure my food. For instance, as long as my blood sugar is OK, my doctor says that I can have a few cookies now and then. These are regular cookies, they aren’t dietitic or fat free or sugar free. However, I make sure that I take two or three out of the box or bag, and put them on a plate. I don’t take the box or bag and plop down in front of the TV with it…if I do, then I usually find that I’ve eaten half of the cookies. Portion control is a must. Look at the diabetic exchange sheet, and you’ll find that most foods have an exchange number, but some things don’t. For instance, I can eat as much celery as I want, as long as it’s plain celery. If I want to stuff it with cream cheese, or put ranch dressing on it, I have to take those into account. But plain celery is considered a “free” food. And if I use a fat free salad dressing, I can have as much of that as I like, too.
